Pan fried seasoned mackerel with zobo rice and spinach/kale sauce

A meal to cook together in the kitchen with so many elements and so much fun. Try this yummlicious meal  it promises to tantalise your taste buds.

Pan fried seasoned mackerel


1. 4 mackerel fillet

2. 1 teaspoon medium hot curry powder

3. 1 teaspoon parsley

4. A dash of garlic salt 

5. 1 teaspoon paprika


1.Place mackerel in a bowl with cover and add all dry spices.Cover bowl and shake gently.

2. Set aside for up to 1 hour (longer in the fridge is good, you can do this overnight)

3. No oil added as mackerel is oily

4. Pan fry lightly on both sides for 5 mins set aside for serving 

Zobo rice


1.1 cup parboiled easy cook basmati rice

2. 1/2 cup hibiscus flower

3.,Salt to taste


Add hibiscus flower into a pot with 1 cup of water for 10mins set aside. Strain out the flower. Add salt to water, then add rice to the infused water in the pot cook for 15mins. or until rice soft when pressed between 2 fingers. Set aside for service

Spinach/kale stew


1. 2 large chopped tomatoes

2. 1 chopped red pepper

3. 1 scotch bonnet optional

4. 1/2 medium onion and 1 tablespoon of vegetable oil and 1 Knorr cube seasoning

5. 1 cup measure of chopped kale and 100g spinach leaves- chop it up


Steam kale in a pot for 5 mins set aside

Place tomatoes, peppers, onion in a saucepan steam for 10mins until thick 

Strain kale and add to the sauce simmer for 5 mins

Add oil, add chopped spinach turn off the cooker and leave pan covered for 5 mins. 

Ready to serve
